Move over Indian Summer, we want autumn! I'm a bit fed up with summer to be completely honest with you. Cozy nights by the fire with a good book, can't wait!
Although to the folks with children you might relate that cough/fever/bogie season is a nasty downside of autumnal and winter bliss.
Instead of preparing with all colors of Detox Juices let's begin with sprucing up our health with a bit of Soup!
I stick to a few basic rules for soup making: chuck in leftover vegetables from the fridge, don't make it long because then you might as well spend your time cooking a more elaborate dish and last but not least , always add some healthy roots such as turmeric, ginger, garlic!
This is a vegan soup but you might just as well replace vegetable stock with chicken stock and/or add crispy Pancetta.
- 2 small onions
- 2 cloves of garlic
- 3 sprigs of fresh Tarragon
- 4 cups of carrots
- 3 small parsnips
- 2 small potatoes of 1 big
- 1 tbsp fresh turmeric
- 4 tbsp of vegetable stock
- 1 cup of celeriac
- 1/4 cup of crushed flaxseed
- 1.2 L of water
Chop up your onion, garlic and let sweat on medium heat, chop up all vegetables and add to the onions/ garlic, remove the stalks of the tarragon and add as well. Leave on the heat for about 2-3 minutes while tossing around vegetables.
Don't brown them!
Add stock and leave to simmer slowly for about 15-20 minutes.
Blend it, mix it and enjoy it with some sprinkles of flax seed, other nut mixtures, fresh herbs and a delicious thick slice of bread!
It's hard to find a good vegetable broth that doesn't look like a square chunk of poultry poo, but I managed to find my favorite in Albert Heijn , probably you can find a good one in organic stores or local stores as well!
