Once a year husband’s University friends come over to spend an evening catching up and most importantly have a few beers. Few being quite the understatement. ..
But they’re absolutely lovely and so I felt it was my duty to line their stomachs with a decent meal. As they spend half a year on big cargo ships I felt quite sorry for them eating poorly and missing out on all these home-made meals.
Not at all, they have Chefs on board educated by the finest cookery establishments. Well good for them, no one survives long on disgusting food and bad Wifi...
I’ve made this assembled Mexican meets whoever meal many times and trust me, there is little to no risk of screwing this one up.
- 800 gr of pork/veal minced meat
- 1 cup of dry white wine
- 1 tsp of Dry Curry powder
- 2 tins of chopped tomatoes
- 1 clove of garlic
- 2 onions
- 2 tsp of Mexican herb mix
- 1 lettuce
- 1 cup crumbled fea cheese
- balsamic vinegar
- olive oil
- About 20 sprigs of Coriander/cilantro
- 4 stalks spring onion
- 1 bell pepper
- 1 cucumber
- 1 chili
- 2 cups of sour cream
- 8 flour tortillas
Chop up onion and garlic and fry in a splash of cooking oil, add the minced meat after a few minutes before the onion and garlic turn brown. Cook the meat, some browning can and adds extra flavor. Add white wine, tomatoes, curry powder, spice mix and leave to simmer up to 30 minutes.
in the meantime, chop all other vegetables finely together with the spring onion and coriander stalks. Leave the leafs for the salad.
Chop the iceberg lettuce in fine slices, no one wants half a vegetable patch in his wrap... and mix together with cilantro leaves, balsamic vinegar and olive oil. Don’t forget pepper and salt. Crumble the feta cheese over the salad.
Preferably, you can make your meat/sauce a few hours or even a day ik advance. It will always taste better. But don’t worry, last minute will do just fine as well.
Chuck all the ingredients on the table and let everyone assemble their own wrap.
No Michelin star recipe but it did the trick, well sort off... they still looked a bit “tired” this morning.
